Beautiful Rainbow 🌈 Peanut Butter πŸ₯œ Granola Bars

  1. Put 2 Β½ cups of oats in a bowl.
  2. Add 1 cup chopped pecans, 1 cup chopped cashews, Β½ cup pistachios,  Β½ cup chopped almonds, Β½ cup chopped walnuts, Β½ cup roasted peanuts πŸ₯œ. (You can substitute nuts for ones you prefer as long as total amount stays the same).
  3. Add 1/4 cup flaxseeds and Β½ cup sunflower seeds or pumpkin πŸŽƒ seeds. 
  4. Add 1 cup dried cherries πŸ’ and 1 cup golden raisins.  (You can substitute other dried fruit).
  5. In a pot on the stove,  melt together 1 cup of honey 🍯,  2 cups of peanut butter πŸ₯œ,  and ΒΌ teaspoon of almond extract (optional).
  6. Pour honey mixture into the oat and nut mixture and mix well.
  7. Put mixture in a pyrex or other baking dish lined with parchment paper and sprayed with nonstick spray. Press mixture evenly in pan.
  8. Let mixture set in a cool place for about an hour.
  9. Using parchment paper edges as handles,  lift out of pan and cut into bars.
