Beautiful Rainbow Hummingbird Cake

  1. Put 2 cups of brown sugar in the mixer (preferably a stand mixer.
  2. Add 1 ⅓ cups of blood orange infused olive oil from King’s Olive Oil Company.
  3. Add 3 eggs and mix with a paddle attachment.
  4. Mix until combined. Add 1 teaspoon of vanilla.
  5. In another bowl, mix dry ingredients: 2 cups of flour and 1 tablespoon of flour, 2 teaspoons of cinnamon, 2 teaspoons of baking soda and 1 ½ teaspoons of salt.
  6. Usings the back of the hand method, add the dry ingredients to the wet ingredients. Mix.
  7. In another bowl mix together 2 ripe bananas and 1 8 ounce can of crushed pineapple with juice and 1 cup of chopped pecans. Stir this int o your batter.
  8. Spray cake pans with nonstick spray and cover the bottoms with parchment paper. Pour the batter into the pans and bake at 400 degrees for 10 minutes and then lower the temperature to 350 degrees and cook for another 15 minutes until the cake is done.
